“Cooking Challenge” was the program of the University of Illinois Extension Council meeting held the evening of March 29 in the Effingham Extension Office. Staff members present were Carl Baker, Ken Larimore, Michelle Frombelle and Tabitha Welch. County representatives present were Mandy Miller, Anna Jean Rhodes and Kyra Willenborg of Fayette County, Tom Haarmann and Douglass McCain of Effingham County, Shelah Bergbower, Lynnette DuSablon and Lindsey Vogt of Jasper County (Clay County was not represented).
An open house to meet and greet the new dean of the College of Agriculture, Consumer and Environmental Sciences (ACES), Dr. Kimberly Kidwell who is the first female dean of any College of Agriculture is from 2:30-6 p.m. on Thursday in the Effingham Extension Office.
The Real Colors program at the Jan. 30 meeting was recapped.
After the short business meeting, Welch was in charge of the “Cooking Challenge” that eventually will be used with 4-H’ers. The group left the meeting room and went to the large social/kitchen area. In three areas of the room, tables held electric cooking appliances and all kinds of utensils. On another table, there was a variety of foods to cook – a large package of sausage, cabbage, eggs, tortillas, canned tomatoes/green chilies, cheese, rice, milk, a variety of spices, green and red peppers, and many other items; there were not three of every item, some had only two.
The eight county representatives present were numbered 1,2,3 and were divided into three groups; Larimore joined one of the groups.
Welch said the sausage would be divided into thirds, one for each group. The groups had about five minutes to determine a recipe to make, then had 30 minutes to get the recipe plated for judging.
The judges were two adults and a youth. The recipe that won was from the men’s table. Each received a large tote bag with a variety of utensils in it.
The next U of I Extension Council meeting will be May 30 at the Effingham office.
